– 6 large egg yolk– ¾ cup white sugar– ⅔ cup milk– 1 ¼ cups heavy cream– ½ teaspoon vanilla extract– 1 pound mascarpone cheese, at room temperature– ¼ cup strong brewed coffee, at room temperature– 2 tablespoons rum– 2 (3 ounce) packages ladyfinger cookie– 1 tablespoon unsweetened cocoa powder

Whisk egg yolks and sugar in a medium saucepan until smooth. Add milk and stir constantly over medium heat until boiling.

Remove from heat and let cool after 1 minute of gentle boiling. Cover tightly and refrigerate for 1 hour.

Beat cream and vanilla with an electric mixer in a medium bowl until stiff peaks form.

Whisk egg yolk mixture with mascarpone cheese until smooth after removing from refrigerator.

Mix coffee and rum in a small bowl. Half ladyfingers lengthwise and drizzle with coffee. Put half the soaked ladyfingers in a 7x11-inch dish.

Cover ladyfingers with 1/2 mascarpone and 1/2 whipped cream. Layer again. Top with cocoa powder. Refrigerate 4–6 hours to set. Enjoy!
