This pistachio cake is simple and tasty. Pistachio butter, cake mix, and pudding make a delicious green Bundt cake.

Pistachio Cake:– cooking spray or oil for greasing– all purpose flour, for dusting pan– 3/4 cup unsalted pistachios, toasted or 1/3 cup pistachio butter– 1 (15.25 ounce) package white cake mix– 1 (3.4 ounce) package instant pistachio pudding mix– 1 ½ cups water– 4 large egg– 1/4 cup vegetable oil– 2 to 4 drops green food coloring– 1/2 teaspoon pistachio extract (Optional)Glaze:– 1 cup confectioners sugar– 1/4 cup heavy cream– 1 teaspoon vanilla extract– chopped pistachios for garnish (Optional)

Preheat oven to 350°F. Grease and flour a 10-inch Bundt or tube pan.

Step 1
Scrape bowl sides as needed to make pistachios creamy after 7–10 minutes in a food processor. Set aside. Make a well in a large bowl of cake and pudding mixes.

Fill well center with water, eggs, oil, processed pistachios, green food coloring, and extract. Complete mixing. Put batter in pan.

Bake 50–55 minutes in preheated oven until cake springs back or a toothpick inserted in center comes out clean.

Allow pan to cool 15 minutes. Cool completely on wire rack. Make the glaze by mixing powdered sugar, heavy cream, and vanilla in a small bowl.
